changing careers - path to interview

Hello!
I have been reading these forums for a few weeks and this is my first post. I am a potential career changer. I am 41 now, have many years in the corporate world followed by 7 years as a business owner. I've spent the past several weeks meeting numerous pilot friends for lunch and getting their opinions/advice, and my husband (a pilot himself) is totally on board if I do move forward with this process. I wanted to post here and see if there was any advice for the timeline I've set out for all of this.
Due to the nature of my business, I have bookings through early next summer that I am obligated to see through to completion. I also have some work to do in the flying front, in the meantime, anyways. I currently have 1328TT, 1100 of which is PIC, 80hrs IFR, 80 hrs night, about 300 x/c, but the kicker, only 8 ME. I have my CSEL/CFI and have taught (very) part-time as a freelancer for the past 10 years. My instrument work is rusty as I own a taildragger that is VFR-only, but I have already started to address that. I desire to get my CFII and will also get my CMEL/MEI and get my ME time where it needs to be. As of now, the plan is to get nice and current on the IFR work again and fly as much as I can this summer. I'm known for reading everything I can get my hands on, so there will be lots of that as well.
I am planning on adding the multi ratings and multi flying in the late fall when my work slows and I can dedicate myself to it. Winter is slow for my business so it's the perfect time to jump in with both feet and get everything where it needs to be time-wise. I hope to instruct a bit throughout the whole process as well.
My main question is, when is it best to start applying and sending out resumes in this process, given that I'm tied to my business through next June? I do plan on attending WAI next March. I should have my CMEL/MEI by then. I will also be flying to WI and will be at OSH in a short 3 weeks with my husband, but I am so early in the process at this point that I don't see any visits there being any more than for information-gathering on my part, and a chance to ask some questions of the various regionals.
Any advice on how best to tackle the hiring process given my timing would be most appreciated. I know things may change a lot between now and next summer, as well.
