When was looking, wanted either FedEx or UPS. Ended up at brown before a purple call. Had and have many, many friends at both. Certainly differences, but generally we have much in common. UPS bids 56 days at a time in 28 day blocks. When I listen to each others gripes, sound very familiar and similar. We each have our specialty gripes though, but same at every employer.
Think you ought to really consider the business futures of the two companies in the markets they compete, and where the future threats are emerging to their strength in those markets. (Would not stop from applying to both, but keep evaluating all the way to touchdown).
Also, UPS still has 32 awaiting recall and coming up on four years on the street.
UPS pilot population is declining. No airplane purchases even contemplated.

I agree with SaltyDog, apply to both FedEx and UPS, and if one or both call, you cannot go wrong as far as pay, benefits, equipment. For that matter, also apply to United, Delta and American. Whoever calls first, go for it. Don't wait around for cargo carriers to call, while the pax carriers are hiring thousands.
FedEx isn't hiring for now. According to the company, no hiring for 12-18 months, but that could, and most likely will change.
UPS has the 32 on furlough, with the good news of recalls starting. Hopefully they do the right thing and get all those guys/gals back on property ASAP.
And to the OP, I agree with your statement of FDX and UPS setting the standards for pilot pay/QOL for cargo carriers. One more carrier on that list could also be Atlas, which is currently hiring.
