It leaves ORD at 23:50z on the 9th, gets to BKK at 19:25z on the 11th. I don't know what they'd do with you for 10 hours in SYD. In HKG you'd ride over to the passenger terminal with the crew and clear in there. If you have a US passport there's no requirement for a visa if you stay less than 90 days

If you absolutely must jumpseat to BKK rather than flying on a paid ticket you should go to "somewhere in Asia" and buy a cheap ticket to BKK for 200-300 (400 round trip). What I usually do when I jumpseat is buy the ticket as I am boarding the airplane in HNL (it's a tight window to purchase so you have to do it via cellphone). Without using Zeds and unless you can get directly to BKK it's going to cost you 400-700 to "jumpseat", at that price you might as well buy a ticket for $1000 round trip (depends on days and season).
