Any advice on these travel packages offered by the Alaska Railroad?
We're considering a 7-10 day vacation in late August.

I can answer my own post now. We took the "Rails and Trails" package, and it was absolutely great. The Alaska Railroad is a national treasure. Passengers have posted some good photos on the website linked above.

The Railroad's website offers several packages, from a few hundred to a few thousand per person. We customized our trip somewhere in the middle, by selecting less expensive hotels and omitting a few items. Cruise ships also offer "sea/land" combinations which can be a good deal. You can cover the same territory via bus, car, or RV, but I think the train is the way to go at least once.
