Is Mesa still operating their flight school in New Mexico? That might be a southeast option for you. Lufthansa use to have a large training program for screening pilots down that way too. Otherwise it's not a CFI gig but Page, AZ had a great flight seeing outfit that paid OK, had apartments on the field, and the tourists tip very well. Pay was about $30K if I recall correctly. Typically one flight would bring you $50-200 in tips.
It is pretty dry out there. The flight schools I was helping out at had to let two of their full timers go and told me they were going to pull me off the schedule for the time being unless it was do or die for stage and prog checks.
