I am in the process of obtaining WIA funding to renew my Instructor certificate and add a MEI. They want me to prove I can find a job after training. Can anyone come up with statics that prove there is a "severe" shortage of instructors?

What state if you don't mind me asking?
My wife didn't have to prove there was a severe shortage of "insert job" to get WIA funds. She just had to show that it was beneficial to the progression of her career. I guess your argument could be that it would improve your resume making you more marketable thereby increasing your chances of getting a job.
Every state is different, which is why I'm curious which state you're seeking funds from.

I guess you could talk ot a major flight school, they make up fake statistic's all the time about pilot shortages etc..

Honesty is the best policy almost all the time, so don't go around lying or making things up.
Anec dote. I got ramp checked at our local Drop Zone a few months back. Our airport is expanding the runway directly into some poor fellow's farm using imminent domain or whatever it is, and people are angry and calling the FSDO. They say things like, that skydiver plane is doing acro over MY HOUSE again. These calls all started since the county ruled we could expand the airport. I passed the ramp check in 3 minutes and the FSDO guys went home. Again.
But he said one interesting thing after he put away his notebook. The local area is in desperate need of CFIs. I think he was serious and he probably meant all over Kansas. So if you want to put something real on there, contact the Wichita FSDO and tell them you like runway projects and by the way you also need a job.
