The Proud Bird restaurant is immediately east of LAX (as in across te street from the perimeter fence), and has a nice collection of WWII birds out front. Never been there, so not sure how they look in person, but have seen them on short final, landing west.
I believe the museum of science and industry has a Blackbird, an F-20, and a YF-23.
I believe there is a Blackbird museum at Palmdale.
And, Palm Springs has some kind of midsized warbird museum.

I second the suggestion for the one at March Field in Riverside. Not just a bunch of old planes, although there is a bunch of old planes. Many, many unique exhibits.
Bell P-59 Airacomet (the only one in existence). Some F-14's intercepted by US Customs on their way to Iran. Some black market Migs from a different shady arms deal, IIRC, from Romania. SR-71. Just to name a few.
My favorite is the cutaway B-47 cockpit used as a set in "Strategic Air Command." James Stewart sat here.

It's a SoCal driving adventure but Planes of Fame at Chino is quite worthy of a visit and hosts some fun gatherings from time to time. Reagan library at Simi Valley includes a walk through Air Force One. Sweeping views of the area behind a tall chunk of the Berlin wall. Former Secretary of Defense Mattis speaks there next week.

Not aviation but the Gene Autry Museum in Griffith Park across from the LA Zoo is phenomenal. I did it on a whim back in Apr on a layover and was pleasantly surprised. Take one of the guided walk throughs. One of the docents is an amazing 80ish year old German immigrant, his knowledge and insights are amazing.

If you go, swing by the observatory as well. There is more parking and shorter hike on the Greek Theatre side (east access) of the park road leading to the observatory. It’s a grand 1930s Art Deco building. The exhibits are cool, but I enjoy the architecture and views, if it’s clear, more than anything. Plus it’s Hollywood history, Terminator, Rocketeer, an episode of ST Voyager among others have used it as a location.

I use this site when I have time enough to get out on a layover. Most people hate it, so you have to comfortable looking at historical markers by yourself. You can find airplane crash sites, etc.
