During my year at UPS, we had a female pilot (I believe she was the F/O) operate a DC-8 out to Denver. While the rest of the crew left the cockpit to go to the hotel, she said she'd be along in a few minutes. Sure enough, a few minutes later she showed up, in civilian clothes, and asked the captain to please call the company and tell them that she had just quit, and then she thanked the Captain for the ride out to Denver, so that she could start at United the next day. I wonder if she's still smiling. Probably not.

Not to be outdone, we had a guy at FedEx, right before 9/11, who had just finished checking out as a Captain, quit, to go to (I can't remember which) another airline. His first day of work at the new carrier, they furloughed all the new hires. Either that or they just let them go (again, I don't remember which.) Anyway, it just goes to show that the grass may look greener on the other side of the street, but it ain't necessarily so.

I see your point here, but still crappy employers deserve crappy attitudes.

I left my previous employer without a 2 week notice, in fact the night before my next trip, with an email message to my CP. He simply replied - "you are #4 today, good luck at your new job".

One can spend the rest of the career in a pile of poop, not letting go the seniority number and never be treated well and be happy at a good company.
You just need to be at the point of quiting flying all together if it doesn't work out. It's called freedom - opposite of slavery
