You might want to look in the Oviedo area. It's near UCF, so I think it might be better insulated from fluctuating home values (a wag on my part). Drove through the area for the first time in several years the other day, and it looks like the area has expanded quite a bit.

Lake Nona and Dr Phillips were also suggested, any thoughts?

Have a buddy (x3 ) that lives in the Lake Nona community. Seems to like it but its pretty vanilla. They have that little community place with the restaurant on the lake as well. Easy drive to MCO.

They are currently building the train between MCO and the east coast too, so also take a look at where exactly the stops will be due east of MCO. Especially if you are a beach person.
