I understand that in UPT we are studs but if I am flying in an aircraft that requires two pilots (T-1) and its just me and the IP...why cant I log that as SIC?

I don't know much about the T-1. If it requires two pilots than you might be able to log SIC. I believe you also have to have at least a private pilot certificate with an instrument rating.
