How long do I have to wait, after taking pain medication, before I can legally fly?

Depends on the med, but the USUAL requirement is twice the dosing interval..ie if you take the med every six hours, you would needs to wait 12 hours after your last dose.

Narcotics might very well be different, 24-48+ hours might be required. I would certainly ask an AME if it's narcotic (DOT tests for that).

When I recovered from back surgery, my company's Dr. told me that I was legal after 24 hrs (this was percocet) but if tested after 24 hrs it might show up, requiring me to produce a script, so he suggested 48 hrs to preclude any hassles.
