Dont try to make huge changes all at once. This is a set up for failure. You are looking at a change in your "life style" which it is. This is a big deal for most people. Consider small incremental changes with your diet and exercise routine. Most people cant make the big changes all at once thus setting up for failure.
Starting out with oatmeal for breakfast like suggested is a great idea.
Dont get on a treadmill for the first time and plan on running three miles. Get on there and plan on walking 15 minutes for the first time. Depending on how that goes you can make advances from there. Dont not let yourself get hurt or burn yourself out.
Also pay closer attention to that "chemical stuff" from your lab results. Get a copy every year and review it closely. If you dont understand something then ask or look it up. For example, high alt and ast numbers can mean a failing liver. Some serious stuff here and it's not impossible for a doctor to overlook something. It's never too late to do the right thing. 5-6 small meals a day so you are eating like every 3 hours. Lots of fish and some red wine helps too.

absolute best recommendation right there. Once I saw it I cut out red meat from my diet. I'm down to 2 meat(beef, chicken, fish) meals a week. I also don't overcook my vegs anymore. Everything taste so much better in its natural state. And stop putting salt on everything.

Most Americans find fruits and vegetables anathema; it's sickening how hedonism has conquered the mindset of the common citizen. I eat a diet rich in fruits and vegetables and many of my friends deem this to be "strange." I see this overall as indicative of a health epidemic in the USA which is deeply ingrained in the youth, and is the main cause for diabetes, cancer and a whole bunch of other illnesses and diseases. On top of that, the western lifestyle of working long hours, sitting down all day and having the luxury of quick transportation compounds the problem of an unhealthy diet hundredfold. Just sick...and frightening is what I call this situation.

The biggest life-changer for me health-wise on the road was purchasing a travel cooler. I pack healthy snacks and even meals so I'm not left stranded and making hunger pang induced poor food choices. Greek yogurt travels really well and high protein content keeps you feeling full. There are even specialty stores in TX and in CA that sell pre packaged meals with no preservatives and tailored to your diet needs such as gluten free etc if you happen to live there. It takes a little effort but its worth it.

Also The Engine 2 Diet. I dropped total cholesterol 60 pts and LDL 49 pts in 4 weeks. Plant-strong works!

It's certainly low in fat and cholesterol.

Cut down on french fries, red meat, bacon. Don't drink cola drinks and cut down on your sugar.

Eat a salad once a day and fish twice a week. Try to buy some Omega-3 fish oil tablets, preferably those from New Zealand.

Walk whenever you can.
