How long does it average from completion of the sim to IOE?

Depends on the company and how backed up training is. My last wait was almost a month. I've seen it go even longer or as short as a few days.

depends on your company, WX, how you do, amount flight time you get on your trips, how fast you go from checkride to first IOE flight... variables variables variables...

2-3 weeks average.

Good luck! IOE trips are the best trips you will have for the next while, so enjoy them!!!

*EDIT: 2-3 weeks average is from end of sim to END of IOE. And that is assuming you start IOE within 4 days or less of your sim checkride.

Eagle was pretty much 1 to 2 days after sim ride. I have a friend who works for Expressjet who took almost 2 months to get to IOE because of a shortage of check airman. This is the leading cause of delays in IOE completion.

They are good trips because the checkairman is probably a senior captain who has a pretty good line.

One reason is that scheduling may assign IOE FOs to the check airman's line. Assuming he's senior, that may be a good line to fly...no early departures or midnight arrivals, good layover locations, etc.
