Logging PIC is not as important as BEING PIC. Employers want PIC time because it shows that the applicant has not only been part of the decision making process, but the ultimate one responsible for those actions.

In my opinion, if you have to ask the question of if you should log it, you shouldn't, because you aren't building the PIC experience that the logbook is reflecting.
