Typically, how many days off does one have off per week?
I can only speak for the Northeast operations. But flight and duty times vary widely. Most of the EAS outstations like RUT, LEB, SLK, etc work long days and get a lot of flight time in. Most outstations have at least 45 hours of duty per week. The Cape schedules (HYA, EWB, ACK, etc) tend to be mostly 40 hour min lines, with less flight time. For example, when I was based at one of the EAS outstations, I was getting paid 52 hours a week and logging 85-95 hours of flight time a month. When I was based down on the Cape, I was only working about 30 hours, getting the 40 hour min, and logging 35-45 hours a month.
As far as days off, you'll almost definitely get 3 days off a week. The 5 on 2 off lines are mostly gone if not entirely gone. One of many things the union was able to accomplish, despite what some broken records may say...
