With the B756 group becoming a "Shrinking Fleet" under current/future plans (L-UA 757's), most 'junior' pilots wanting some type of direction post SLI wouldn't want to bid onto such a fleet with those future plans by choice. In contrast, the B737 currently being a "stable fleet" for the immediate future, it's not surprising one bit that IAH filtered as such.
The old adage, being "junior" on a shrinking fleet is NO BUENO on all sorts of levels, especially the QOL.....Avoid it like the plague.
As long as the 2 groups are not flying together, you'll see UAL 767 Capts. stay on the airplane. Historically, bumps are a better choice than bidding off a dying fleet.
