You need to interview the employer, just as much as the employer is interviewing you, to determine if the employer would be a good fit for you (not all are good fits for everybody). A few things to consider, in no particular order:

1. How is the airplane used (common airports, trips, passenger loads, etc.)?
2. How many days per week of work are typical (flying/sitting on the road)? How long are typical trips...day trips, out-and-backs, multi-day & multi-leg?
3. How many weekends/holidays worked
4. What is the expense policy for meals/rental cars/hotels/tips/etc
5. How do days off work? What about being 'on call'? Vacation/time off policy?
6. Health & stability of the employer (company or individual)
7. Expectations of the employer for you, to include what if any additional duties you will have
8. What kind/where/how often for training?

Industry standard for full-time pilots is a SALARY with standard benefits (medical/dental, 401K, cell phone or allowance, uniforms <be it 'airline style', business casual, suits, whatever>, etc).
As a corporation with flight operations, I would agree with everything you said. Good post.
