with the disclaimer that I am no expert (or know much), and it was a while ago, here is my experience:

I worked in Europe for a wet-lease operator between 99-05 that gave me a full copy of my records when I left, then started work for a 135 operator in the US in 05, and since have been hired by a mayor in 13. As far as I can tell not much effort was made by either to contact the ACMI to confirm my background. The 135 called the ACMI (I know this because the asked one of their European pilots to call as they weren't sure anyone there would speak American......).
So FWIW, in your situation I would :
-Contact the company that is interviewing you and ask for guidance.
-Failing any input there use PARC as the Agency under the assumption they are far more likely to reply to a US request for info.
-Put the one day job in there under the general rule that it is better to not look like you are hiding any info.
