Don't know about "incentive rides"- At least when I was a student, there was pretty much only one opportunity for non-aviation folks to fly on university aircraft, and that was Parents Weekend. The reason is for liability purposes. You might be able to talk them into a few minutes in a simulator though.
Sometimes incentive rides will be permitted depending consent from a lead instructor. I have seen prospective students do this, although not many. (i think like 2 ever in my time at UND)

It's a good idea to check out Grand Forks to see what you think of it. I flew the private pilot test course when I came to UND. I thought it was sort of a waste of money but it prepares you for flying in the area and learning all the policies and procedures and how UND works in general. Taking the private ground school again amazed me because it got much more in depth than any of my part 61 training did.
