Don't know about "incentive rides"- At least when I was a student, there was pretty much only one opportunity for non-aviation folks to fly on university aircraft, and that was Parents Weekend. The reason is for liability purposes. You might be able to talk them into a few minutes in a simulator though.
Sometimes incentive rides will be permitted depending consent from a lead instructor. I have seen prospective students do this, although not many. (i think like 2 ever in my time at UND)

It's a good idea to check out Grand Forks to see what you think of it. I flew the private pilot test course when I came to UND. I thought it was sort of a waste of money but it prepares you for flying in the area and learning all the policies and procedures and how UND works in general. Taking the private ground school again amazed me because it got much more in depth than any of my part 61 training did.

hahahaha exactly why i went to FL.... but... he IS from Germany... being from FL.... i dont do so well North of JAX... besides... we dont call it north florida for nothing.... that really is far north!!! hahah

Haha! Yeah, thanks for the answers! I know it's cold up in ND during the winter and that IS like my biggest worry! I'm originally from California and I already hate how cold it gets here (and it's never colder than -5°C). Seriously, I know what I would be getting myself into, but I think I can stand that for four years. I would imagine that I would be happy being able to move farther south after that though! ;-)

I will definatly have a look at the city, thanks for the hint!

Oh, and concerning the PPL, would I be able to do a PPL at UND without already studying there? I would really like to do my PPL next summer because I might have the chance to Fly N-registered airplanes here in Germany while I'm still here for a year then. So if I could do my PPL there next summer, that would be cheaper than doing it somewhere else and then completing the test-course? How much would a PPL roughly be at UND? The school I was thinking to attend for my PPL in texas has a 150 for about 60$ an hour - I figured thatw as really cheap...
