I attended the recent AviationInterviews.com job fair in Chicago. Bear in mind, each job fair may be a little different. Certainly there's no sims there. Some airlines were conducting one-on-one interviews in a private room, most were simply taking your resume, chatting with you for a few minutes, taking some notes, and said they would get back in touch with you later.
The most important thing is that you have a contact, they can associate your face with your name, and it's up to you to followup and harass, oops I mean be politely persistent in following up with them to show that you want to job and they should bring you in for a full interview.
