Is working full time at Boeing while also completing instrument through commercial licenses on the weekends or after work a feasible option in your guys' opinion? Thank you.
Certain aviation companies will pay for employees to get their pilot licenses. Check to see if Beoing is one of them.

I have a buddy who got Textron to pay for most of his ratings, and he’s a service pilot for them now... started at the company doing work on cabins.

Getting your licenses part time is an option. Your success will depend on how much effort you put into things.
