I have an Hawaiian Airlines Dispatcher sitting next to me. Their 321 is so limited by ETOPS fuel requirements that they are payload limited on just about every flight across the Pacific. The airplane is forced to fly in the high 20's and low 30's not because of lack of power but because the wing can't handle the weight. Their coffin corner is really low at high weights.
With two tail strikes within the first couple of years and maintenance cancellations 3 times that of a B737, they can't wait to get their new B787's.
