In Eagan, there are a plethora of places to shop. Many places are within walking distance. We were at the Townplace Suites (Marriott) and there is a Walmart and a grocery store nearby. You could probably convince the shuttle to "make a grocery run" and come pick you up when you're done. We did that in Denver a couple times.
