You can drop less than the "min days on" for NB, but not WBs (including the 7ER). So in your scenario, as long as you're not on the 7ER or bigger, and you have plenty of coverage, then yes you could drop day 2.
if anything I'd say you could drop say 1 or 3. I doubt theyd let you drop day in the middle and have two single days of reserve.
