Our ground instructors told us that we'd be able to follow the FO/CA on a walkaround if we're in uniform and I plan on doing that. Would it be considered odd for me to travel in uniform if I haven't even completed training yet? You can just tell the gate agent you'll be observing and want to "list for the actual." Depending on what airline its for you'll have to make sure you list in advance with ZED or just normal non rev listing. If you go in the morning and you're at the gate around 45 mins before departure you can probably catch the captain walking up and ask if they mind if you observe.
