This is an example. If your denial was due to chemical dependency, etc, even though some employers might not "care" as much as others,
if you wanted to fly for any company that operates within Canadian airspace, it could be an issue. This is just an example. Others would know more about it than I do.
Employers might care, but only if they know. If it involved legal issues, then they can probably find out so you should probably disclose it.
If it was strictly on the medical side, no law enforcement involved, then that's between you and the FAA in this country and potential employers will probably have no reason to know.
