Now, let me ask this question. How good is single-engine turboprop time in your logbook? Only reason why I am asking is because I am one of those Caravan drivers and it seems like although I have the experience in the weather and such, it doesn't help with multi PIC. Any thoughts would be appreciated.

Depends HUGELY on what you are applying for. If you are going for SWA, 1000 Caravan PIC is nearly useless. If you are applying for a Conquest job with recent twin time, it is great. Going for a PC-12 job, it is iffy. The regionals only wanted to know my ME time and currency.
