Size matters, weight on your head, space in your bag. Design matters too, some people tolerate in ear headsets well, others do not. I'm personally fine with them for about 3 hours, after that they hurt. Bose is the most quiet for YOU, for the other pilot it makes an annoying hum. Bluetooth can be nice but everything with BT needs batteries, Telex makes a few noise cancelling options that do not need batteries and are lighter than some other options. I like the Bose on noisy aircraft (ERJ, 737) and Telex on quieter aircraft. But it's very subjective so try different options.
