So it looks like both SEA-BCN and SEA-FCO will be farther distance than SEA-ICN with FCO being comparable distance to PVG. since I assume the reason for the swap to the 350 in SEA-Asia was performance, why would these routes not have the same issues?

SEA-EU doesn't have to deal with Russian airspace. And to be frank, profit and loss probably doesn't play a big part in it.
