Can you find a job after the conversion with only about 500 hours? If so, what type of flying?
A few airlines overseas offer a "cadet" program. You apply with the normal application process. You are invited for an assessment, which includes an interview, and a simulator evaluation.

If successful, you will then be offered a type rating course, at your own expense, under the airlines training program, circa 28,000 Euros.

After you obtain your frozen ATPL on type, you will commence flight training and fly the line as a cadet as a two striper. After a certain number of hours on type with a minimum number of total hours in your log book, you will earn your third stripe.

Ryanair is taking delivery of 50+ aircraft over the next few months, and is negotiating, with Boeing for an additional 100+ aircraft.

They are currently interviewing at this time. As for F/O's, they prefer the cadet entry route.
