if you don't have a CFI ticket, maybe pursue that and do some part-time instructing (if your job allows it). This would allow you to sample the civilian sector without having to take a huge plunge giving up your current gig for all those reasons you already mentioned (pension, benefits, stable pay, etc). Keep in mind finding those things in the civilian sector at an entry level job can be hard to come by.
