Please could someone tell me if I would be able to live in the same company apartment as my girlfriend? I heard a rumor that you can't because it's "immoral"?

Yes, it is possible. It is technically "illegal" but if you keep it quiet you would not have any problem. There are tons of people here "cohabiting" and have been for many years.
She would have to find her own job to allow her to stay in the country on her own residency visa (each expat needs a "sponsor" to live in the UAE; this is your employer unless you are married, then you are the "sponsor" of your spouse).
