Wrong answer ... almost every (every?) good flying job out there requires a 4 year degree. Do I think it's required to be a good pilot? ... No, but with the supply of pilots far greater than the demand, employers need ways to sort though the pile. A 4 year degree is just one of the "filtering" methods.
I suggest a better answer, should you be fortunate enough to get an interview might be, "I know that college is an important part of making me a well rounded person and pilot, and that's why I've been doing my best to complete those requirements despite my professional and family obligations."
