Default TCCA/FAA to EASA career question

Hey everyone,
I have my FAA CSEL/CMEL and IR as well as my TCCA (Canada) CPL and group 1 IFR.
I have about 1,000 hours, out of which 150 twin time and nearly 400 dual given (instruction, in a different country).
I also have a Portuguese citizenship.

I am seriously considering moving to Europe and pursuing aviation career there, as aviation in Canada is on it's death bed (impossible to even get an interview with any company with 1,000 hours).

Does anyone here with EASA license or anyone who did a similar move can shine some light? I don't even mind working as instructor in Europe as it's impossible to even find an instructor job in Canada due to it's licensing regime (no one wants class 4 instructor, even with nearly 400 hours dual given). How's the career in aviation in Europe looks like this days?
Also, I saw in other group people talking about "verifying hours", can anyone elaborate on what it means?

There are more Euro pilots on pprune.org. The ones here mostly went the other direction.

Which group though? I have tried asking there, and I haven't got a single response.
