I wonder how many Delta pilots don't even have a single engine type rating? I don't have one.

Single Engine is not a type rating.

Do military pilots (assuming no civilian ratings prior to UPT) get a single engine license from UPT given their time in the t6?
If not, if they fly a SE plane like the F-16 after UPT does that qualify for a Commercial SE license?

Yes, most do. After finishing UPT, most guys take the military equivalency test and go to the FSDO with their UPT paperwork to get their SE/ME Commercial. The military doesn’t do it for you though, so it’s all on the member.

I've had so many prior military guys tell me they wanna take their family flying, and ask me how to rent a plane. When they say they've never flown GA before, I usually lead with a life insurance pitch.

Hasn’t been a factor for a while, but if you are old enough to have flown the T-37, and if you did not fly the F-16, you won’t get your SE Commercial, just ME Commercial/Instrument. (And if you are REALLY old, a fighter guy will have had a centerline thrust restriction, though they will now remove that without a checkride.)

Similarly, for CFI a mil IP can do the written exam, and get a CFII and MEI from the FSDO without ever flying GA, (unless you only instructed in the F-16 and/or T-6, then no MEI). Then, to get your (SE commercial &) CFI, you do a add-on checkride.
