Also few or no regionals do sim checks on the interview anymore.
If you're applying to one that does, it would be a good idea to get some targeted prep in the type of sim they use. There's usually somebody who provides that service. But again I don't know if they even bother anymore... if you need extra sim time in training they'll provide it, in the past they didn't want that expense.

Since you've done it before, it will come back fast. Faster than the CFI's you'll train with. Unless you've let your brain atrophy over the years. If you're worried, do Lumosity and play some video games. Eat some brain food... I can tell the difference if I don't eat healthy.

You're in the era of the regional airline hiring equivalent of the vietnam-era draft physical:
Fill a box with sand. Rake it smooth. Have applicant walk through box. Look at footprints. If applicant leaves footprints, it's evident that he's physical, and therefore eligible. Hired.

I know there's a hiring frenzy and I'll likely get hired, but I want to succeed once I'm there and not have any training snafu's due to my extended layoff from flying. Getting hired and then failing a training ride would be catastrophic for me at my age.

Maybe track down a twin engine Frasca and fly everything at 160kts. Get the scan supercharged and see how you feel.
