Keeping Instrument Current
do you have to be under the hood and log simulated instrument time while doing the required 6 approaches to stay current? do you have to have a cfII with you or will a safety pilot work??

There is a difference between "stay current" and "get current".
to stay current, It can also be done in actual IMC without a hood or a safety pilot. or in VMC under the hood with at least a safety pilot.
to get current (not current but not 6 months out of currency) it can be done under the hood with a safety pilot in VMC conditions, or with a CFII in any conditions.
also, you can use a CFII and a simulator on the ground.

You have 4 options to stay current:
Do the approaches yourself in IMC
Do the approaches in VMC with a CFII
Do the approaches in VMC with an appropriately rated and current safety pilot
Do the approaches in a Simulator or Flight Training device
