AA 737-800's do not do any major cutback... it's all just normal ops with cleanup alts and climb speed adjustments.

No, not the ICAO climb. Climb 2 is selected before departure. If anything changes you have to press it again.
I've never done it in a 757. But that's what our Jepp 10-7 pages say. I've flown the S80 and the 737 both out SNA though.

The United B752s have PW2037 engines, and the SNA departure procedure is:

Thrust - Use Max thrust, set CLB2;
T/O flaps - 15 preferred, 20 if required;
Program V₂+15 to 1550 ft MSL on CLB page;

When cleared to T/O, Hold brakes and stabilize thrust at 1.10 EPR; push EPR switch and release brakes; rotate to maintain V₂+15 at Vʀ; at precisely 800 ft AFE select VNAV and adjust pitch to maintain V₂+15; at 1500 ft AFE accelerate to Clean Maneuvering speed and retract flaps on schedule; at 3000 ft AFE accelerate to 250 kts.

Of course the VNAV engagement and lowering the pitch at 800 ft is noticeable and probably very uncomfortable for the nervous fliers. The trick (at least for me) is to remember to take the thrust off CLB2 about 5000 ft rather than at a much higher altitude.
