I see they posted on the Orange site for F/O's in the CJ - need 500TT, CFI-I/MEI.

Isn't the CJ a single-pilot jet? So any SIC ride alongs would be non-loggable?

In Part 91 you could log only when you are actually flying the aircraft, assuming you have the category and class ratings. I'm not sure if their 135 or 91. In Part 135 the Ops Specs can specify additional crew members. Even if it is a single pilot aircraft if you take a Part 135 SIC checkride in that aircraft you can log it as SIC time. I know at my 135 operator we flew sometimes as one crew member and sometimes as two. The SIC is a crew member and the revenue flight time in a day changed from 8 hours to 10 hours with two crew vs one. Part 135 the FAA certifies the operator and their operation and allows you to deviate from certain regulations.

But I suspect that if the CJ is a single pilot jet and the Captain is typed as a single pilot - then there is no SIC needed and nothing would be loggable, right?

Incorrect. Google flight standardization board report ce-525. You will find that a single pilot may utilize a sic if desired. It's from the faa. And also there are rules for some single pilot aircraft that say if you are single pilot, your headset mounted mic must work to fly it single pilot.

So if you throw the speaker on and use the hand held, you need an sic. I'm not sire if that rule applies to the cj but I know it does for the phenom series.
