What is the proper procedure to non-rev/jumpseat out of MEM on FedEx? I have never done it with then before... any suggestions?

For FDX there is a 1800 number. I think you can find it on fedex.alpa.org- if someone has it please post it...

Default Fedex travel

You have to call 1-866-357-5711 between 2-24 hours before the flight to list. Then show up at the Fedex place and get an escort. There is a good ALPA_FEDEX Jumpseat document for non-FEDEX pilots that walks you through how to do it.
