Already lost count of how many times I've knocked the Man Alt switch getting in/out.

So odds are you can make it work either way.

How do they reach the rudders while still seeing over the dash? (serious question)

The foot pedals are also adjustable. Seriously, the crj can comfortably work for Danny Devito to Andre the Giant

Can anyone explain why even taller pilots think it's appropriate to put the pedals all the way aft when they leave? (yet they still leave the seat almost fully reclined )

Had an FO recently that was 6' 14" (his words) and he seemed to fit ok in the CRJ. Watching him get in and out reminded me of a folding lawn chair!

None the less, a great guy!
