Can an RJ take off on one engine if I forget?

Does this sound plausible?
Scenario is a training/positioning type flight in an RJ. The two pilots are accompanied by a couple of other employees in the back. The aircraft is taxied out an airport with long taxiways and runways, so they delay starting the second engine. And I mean REALLY delay...
The story as told to me is they took off without ever starting the 2nd engine. Obviously the plane was very light, but could this really have happened?

Nope, you still get the "Take off OK" when you do the config test with only 1 engine running. I bet the ERJ could takeoff 1 engine, especially lightly loaded with long runways.

Don't know the RJ but as you accelerate above the speed which nosewheel steering disengages and Vmcg you'd have to reduce the good engine a bit so that you can maintain directional control. Once you accelerate to Vmcg back to T/O power and rudder will keep it straight.
