3 days in HKG

I will be spending 3 days in HKG next week as a part of a required FAM ride.
Since I have never been there before, what do HKG-experienced crews consider the must sees or the must dos?
I'll be staying at the standard crew hotel in Kowloon.

Take the cable car from Tung Chung up to the Buddha, visit The Peak, a ride on the Star Ferry (just to say you've done it!), dinner at the restaurant at the top of the Penninsula Hotel and watch the light show at 2000 (?). A visit to Stanley. I'm sure the regulars can add much more. Buy yourself an Octopus card and travel on the MTR (underground). Easiest way to get around, and most of all enjoy!

I don't get there until the 8th.
I would suggest to someone who has never been to take the Big Bus Tour to Stanley Market if the weather is good. It is a good way to see the city. (Check with the Concierge) At night on the Hong Kong side, Wan Chai or the mid-levels in Soho is a good time. Sticky Fingers or the Bulldog in Kowloon.
If you show up in the bar at Morton's in the hotel around 6pm, you will probably be able to find some crewdogs to hang with.
