Then there's always the desert tour. Your hotel will set it up. In the summer, they pick you up around 5 PM (because of the heat of the day) in a Toyota landcruiser, then you and everyone else doing the tour (from all the other hotels in Dubai) will glom up and caravan to a camel farm, where you'll meet some camels and maybe see a camel race. Very cool. Then it's off to the desert for some woopties and dune riding. Then it's to an encampment (bedoin sp??) where they prepare dinner for your group, which you'll eat while sitting on large pillows. The food was great and at the end of dinner, you get to watch and participate in a belly dancing demonstration. Great pictures for the family at home. Be sure to bring your camera. You can also get a semi-permanent tattoo that will eventually wash off.
All in all, a nice way to spend a portion of your layover, all for maybe 80 bucks. Have fun.
