If you got hired now, you probably wouldnt be through IOE or on the line until the end of July. That being the case, you would need to have 600 hours at time of hire in order to hit 1500 by next August, flying an average of 75 hours a month. At 300 hours, you would need 120 hours a month.... (unless your a military or university guy)

But I mean, I was already told that I pass the interview the same day (250TT by that time). And two weeks ago I was told that I'm still in their list but now with the change, are we still in their list to be called even with less than 1k TT? That's my question now!

Doubtful, Where you go to school? If it wasnt a big aviation university then you need 1500 which wont happen in time.

I'm in a bit of pickle here. I currently have close to 600 TT and trying to decide whether I should opt for working for a regional like Silver Airways (got invited to job fair next week) or suck it up and start instructing till I get 1000-1500 TT and apply for a "better" regional like XJT/Skywest? I was thinking if I get on with GIA, I would at least get some Part 121 experience and get some turboprop time. Any good suggestions?
