When did you interview? I interviewed in October and the instructions didn’t mention any of those things. It just said bring logbooks and if you use an electronic version than you need to print it out.

Same, maybe they recently changed it? Doubtful. I signed each page in my logbook after having it professionally printed at Stables. I did have all my simulator times logged (just don’t apply it to your total time), but it wasn’t necessary. I never labeled anything. They appreciated that I had signed each page.

I printed each page and signed it. I had the check rides highlighted and since I use an electronic logbook, I had my signed endorsements in a different section. Just for good measure I had my recurrent certificates in there too. I chose not to put in my simulator logs because they were horribly incomplete, especially the military ones. I put it all in a nice leather binder I got from staples. Also, for you military guys, the instructions say NOT to bring a summary sheet of flight time. Do yourself a favor and bring it with you because they will ask for it.

Night and Instrument Time
 
I have a paper logbook which I’ve managed to keep updated through the years. The only issue is I stopped logging the night and actual instrument column since 2015. I have an interview coming up in the next 3 weeks. Will this be a problem when they check logbooks? I’m close to 7000tt of which 5500 is all 121

I interviewed this year and there is no requirement to highlight check rides. 99.9% of my hours were mil time and they didn't ask a single question about my hours or even mention my logbook. I'm no expert, but if you have 7000 hours and 5000+ 121 hours I doubt they'll care cause it's clear you have some night and instrument time. I'd do the best I could to account for the hours, even if it means a reasonable estimate, be transparent about it and have a good answer ready if they ask about it.

5 years ago I tabbed each checkride and that’s it. I have never logged sim time except for .5 in a citation 500 level D sim that I got my high altitude endorsement in. Pilot mill.

And you probably got docked for it. If the directions say to tab each Checkride, then tab each Checkride. If they don’t, then don’t tab anything.
