Some tips if you do go with American Flyers:
1. Finish the writtens before you get there
2. Get your spin endorsement before you get there
3. Work on the lesson plans before you get there (If you have time)
You will get the full CFI course, not just a course to pass the checkride.
Good luck!

I would also take a look at Livingston Aviation in Waterloo, IA. They offer accelerated courses for all the different ratings and their instructors are great.
The problem with doing it in Florida or New Jersey the way I see it, is a lot of the flight time that you are paying for is going to be spent commuting back and forth between the practice area and dodging other traffic. Your classroom instruction is also going to be in a group of 10 students. There are goods and bads to that. At Livingston all your classroom instruction is going to be 1 on 1 so the instructor will better be able to cater the course to your individual needs. You can stay at the FBO in their sleep room too!
