Nobody even asked about it at my interview. On the app. I just wrote "Period of Unemployment" and provided contact info for somebody who could vouch for me. I'd think being in the reserves would be as good an explanation as any other.

Do all company's require a 10 year work history? Do some only require a 5 year? Just curious, because I'd really like to be able to leave one of my previous employers off of my work history.
I had two jobs at the time I was working for the employer I would like to omit, so there wouldn't be a gap in my employment history; but I'd be rather hesitate to leave it off the history nonetheless.

The airline itself doesn't require work history, you are providing it because the FBI (or some other government agency, can't remember who) requires it.
So to answer your question, no matter who it is they will want a 10 year history. I had a job I was fired from that I didn't want to put on there, but you have to. They didn't even ask about anything during the interview.

Ive noticed that the american eagle app asks for 3 refereces for each employment gap greater then 30 days for anytime in the previous 10 years and each reference cannot be family. There has got to be alot of young people that cant rack thier brains and come up with that.

The application I filled out was exactly the same. I had a period of a few years where I didn't work because I was only 14 and younger. I had to put it on there though, they want the past ten years.
They don't care if you weren't working, all they want to know is that you were unemployed. Anything else can be answered in the interview(not that they'll ask). My application said to simply put the name of somebody who can verify your whereabouts during that time period. I put my parents.

Keep in mind that if an airline finds out about the other employer later, you WILL be fired...that will be hard to explain at your next interview. Only you can make the call based on the situation.

I wouldn't omit any employer and I wouldn't break the cardinal rule of BEING 100% HONEST! However... make sure you end everything on a positive note!
One thing about background checks:
121 and 135 carriers are required to have documented history going back 10 years. However, they will only do the verification of your most recent 5 years.
