Delta does provide the data. In fact if you use pro Diem you provide them with the data so your statement is confusing. If you mean why does Delta not do my taxes for me then there is not much to say to that. The data is there, you can pay someone to apply the IRS rules and do the math or you can easily do it yourself. Delta is not going to provide tax advise or services.

How do we go back to view our Jan + Feb 2013 scheds/trips/layovers for our taxes? The furthest back I can get to in iCrew seems to be last March, unless I'm doing it wrong, always a possibility!

I know you jest, but between Willies, Qdoba and Moes you can do pretty well depending on your goals since you get to choose the ingredients.
On Moes website you can actually go in and select every ingredient they have, on any item, and it adds up all the nutrition info for you. So say you are more into the meat and veggie thing, you can leave off the rice, beans and cheese and do pretty well.
